FAMOUS QUAN JU DE ROAST DUCK CAME TO SINGAPORE 

The “Global Gourmet Kitchen” which was held in the Feng Shui Inn at the Resorts World Sentosa (RWS) came to a close on 18 November. For this occasion, the Feng Shui Inn management has invited 4 guest chefs from the world renowned Quan Ju De, a legendary brand which was first established in Beijing back in 1864.

Chef Wu Yu Bo has over 30 years of roasting duck experience. He said that for this occasion at the RWS they had brought in the famous Peking duck and 6 other dishes to excite the taste palates of the Singapore diners. When he was asked whether if there are any difference between the roast ducks in Singapore compared with those birds from Beijing, Chef Wu claimed that they are almost similar the same; highlighting that additional ingredients are being used in the local ducks. He also referred to an old saying -- “One who fails to reach the Great Wall is not a hero but one who fails to eat the Quan Ju De duck in Beijing will regret for life”.

Although there are many roast duck restaurants outside Beijing, the Quan Ju De roast duck is still the most sought after roast duck because of its unique quality. Chef Wu further explained that because very high expectations are required from Quan Ju De ducks, so it is prerequisite that the ducks weighs less than 2 kilogram each. And interestingly each Quan Ju De duck has a bar code to identify themselves from the egg stage to the point of stuffing for roast. The Quan Ju De roast duck diners will also get postcards bearing the bar code to keep as a memento.

This is the fourth time that Feng Shui Inn is organizing the Global Gourmet Kitchen. Restaurant manager Mr. Sammy Lee is quite satisfied with the response the event has generated. He said that the Peking Duck is very well-known in Singapore, so the promotion had attracted many locals to taste the Quan Ju De roast ducks. Initially Mr. Sammy Lee thought that perhaps 20 to 30 roast ducks will be sold a day but the response had far exceeded his expectations where nearly 40 to 50 roast ducks were sold each day instead.

When asked why Wenjun baijiu was used to pair with the Quan Ju D roast duck, Mr. Sammy Lee replied that the local diners are not familiar in drinking China baijiu while eating a duck but the good response has shown that Singaporeans truly know how to appreciate food pairing. He felt that during the last 10 days, nearly thousands of diners and guest to Feng Shui Inn have come to understand more about China baijiu which is already a success by itself.

Following up on this success, Mr. Sammy Lee said that there will be more activities involving the pairing of Chinese food and China baijiu especially so during the Chinese Spring Festival. The Feng Shui Inn has plans to launch a major pairing blockbuster between a famed Chinese cuisine & a famed China baijiu. However, Mr. Lee declined to reveal the specifics of the next event, saving the surprise for a later announcement.

The promotional presence of the Quan Ju De roast duck has triggered a high degree of awareness in Singapore especially through the social and printed media. When interviewed, a local patron Mr. Chan said that the last time he ate a roast duck was in Beijing; and now he can enjoy it right in front of his door step. He enjoys it because it saves him travelling and accommodation costs. Mr. Chan also felt that pairing China baijiu with the roast duck is a refreshing idea.

Sammy Lee / or SL: Hi everyone! I am the Senior Manager of Resort World Sentosa Feng Shui Inn in Singapore.
 
CBAS: Can you introduce what will be the coming promotion to be held at the Feng Shui Inn?
SL: RWS organizes an annual event called the Global Gourmet Kitchen (GGK). The best international cuisines will gather here and it will bring an exclusive showcase created by the renowned chefs from around the world. It is the fourth GGK to be held in the Feng Shui Inn. Back in 2011, we have Mr. Kam Fu Cheng, the two-star Michelin chef as our guest chef. The cuisine he brought along aroused the Singaporeans' taste buds and got unparalleled publicity. So it was not hard to identify who were at the top level at such an event. This year, we are honoured to have the legendary 148 years old restaurant Quan Ju De (QJD). They will serve up their world-famous duck banquet for the first time in Singapore at the Feng Shui Inn from 9th to 18th November 2012. No Singaporean is unaware of the famous QJD and we anticipate a great success during the official launch.
 
CBAS: Why do you choose Wenjun baijiu for the commencement of the GGK?
SL: We would like to give more exposure opportunities to the famous high quality China baijiu. We are going to have this promotion - “Chinese baijiu pairing with Chinese cuisine” in the following year. The reason we chose Wenjun was because it is the finest match in taste and aroma with the signatory Beijing Duck. The Beijing duck is prepared by using fruit wood, fat and not tired, resulting in crispy texture and delicious tender meat. And the Wenjun, whose exquisite bottle designed from the inspiration of Chinese guqin, shows a bright clear colour and offers a fruity taste that will not clash with any of the flavours. It is a perfect pairing. 
 
CBAS: Do we have other dishes beside this signatory one?
SL: Quan Ju De (QJD) will bring along the whole menu range which was once reserved for the Chinese Imperial Court, including the braised duck tongue, mustard duck web and more.  Hailing from Beijing, four of their award winning master chefs will also arrive on our shores to present their marvellous skills and outstanding dishes.
 
CBAS: So how long will this event last?
SL: Till the end of 2013.
 
CBAS: After Wenjun baijiu, what other kind of Chinese baijiu do you plan to have in the future?
SL: We will be thrilled to have Jian Nan Chun, which is also a famous Chinese baijiu brand in China.
 
CBAS: The Chinese baijiu pairing with Chinese cuisine is quite a brilliant idea. How did you come up with this?
SL: It is only natural when you have both the quintessence of Chinese culture. White baijiu is indispensable during special occasions such as celebrations or when receiving guests. So we just do what the Chinese will do in China.
 
CBAS: It may seem that the right type of climatic atmosphere is not available in Singapore to enjoy the baijiu. So  is baijiu a popular choice at Feng Shui Inn?
SL: To be honest, the tradition of drinking China baijiu has not become fashionable globally except in China. But the high quality of China baijiu is equal if not even better than the western liquor. Generally the consumers are not fully aware of the availability of the various China baijiu and their high quality value. The establishment of CBAS is timely and it becomes influential in promoting the various China baijiu. 


OASIS GLOBAL WAS CHOSEN TO PROMOTE 'WENJUN'IN SINGAPORE

Aaron Yang / or AY: Hi everyone! I am the Brand manager of China Wenjun baijiu in Singapore. 
 
CBAS: LVMH Group is a big brand and known for its several liquor brand such as Hennessy & Johnnie Walker. Why did LMVH choose to develop China baijiu too?
AY: Speaking of this…our board of directors has the foresight on this area. You can see whiskey, red wine or vodka everywhere but actually it is the Chinese liquor that has the biggest outputs in the world. These Chinese liquor includes the baijiu, the yellow wine and so on. So we can see that Chinese liquors have plenty of development opportunities that have not been fully explored yet. LVMH was looking for a luxury brand which could represent Chinese liquor as well as China. They found that Wenjun has a historical connection. The founder, Zhuo Wenjun, is the first famous wine cellar in recorded Chinese history. And she created the liquor in Qionglai which has the favourable and geographical conditions for the production and fermentation of good baijiu. They saw the value of Wenjun spirit and decided to partner with one of the Chinese baijiu leaders Jian Nan Chun in 2007.
 
CBAS: In your opinion, what do you think is the distinct difference between Wenjun and Chinese baijiu?
AY: Wenjun doesn’t have a huge production output but its quality is excellent. Originating from the wine county of Qionglai, Wenjun brewing process always pursued excellence. Just like Veuve Clicquot and Krug, Wenjun is also a boutique distillery. We are not aiming for high sales but the immediate objective is to establish a high end brand. Like our spokesman Jiang Wen, the famous actor in China, always say --  appreciate the spirit; the behaviour speaks louder than words.
 
CBAS: Which company do you choose to be your distributor in Singapore? Why?
AY: Oasis Global Pte Ltd. First of all, they are the experts in this field (China baijiu). They already have their insight into the market. Secondly, they are committed to what they believed and strived diligently to achieve. I have personally spoken to Charles, the leader of Oasis Global Pte Ltd, and I feel they are the right people to do this. I can see the efforts which they have gingerly achieved step by step and I believe in their conviction.
